Okay, that's it for today friends! I need to finish up our Thanksgiving table centerpieces and tomorrow the cooking begins! If any of you are expert cheesecake makers, do you have any tips to prevent "sinking" in the middle?? I just can't quite keep it from happening with this particular recipe I am using and am not sure what the problem is... Last time I made it, it was better, but not great. And, it causes the chocolate ganache that covers the cake to sink a bit as well. You don't really notice it, but it bugs me to DEATH!!
By the way, if I am a little slow on email replies and order confirmations it is because I do have houseguests right now and have not been on the computer as much this week. :)
