Coconut Cupcakes with Lime Buttercream frosting~
This recipe is in the current Cooking Light (May 2009) magazine, so not only did they turn out pretty good but they are healthier, too! Okay, maybe not healthier, but at least low enough in fat to make you feel not quite so guilty... ;) Anyway, if you like coconut, I highly recommend trying these out. I am not a huge fan of it, but the flavor is very, very subtle. Also, the recipe calls for potato starch, which is a little unusual, but provided a moist, light texture just as they said it would. I think I am going to do a little research and see if I can figure out how to incorporate it into other cupcake recipes.
Anyway, on to other things and I'll try not to mention cupcakes again for awhile...
I am thinking of opening the shop back up in the next day or two, but may wait until Friday. Things have been kind of quiet with nothing for sale and I have to say that it's been nice. :)
BTW, we just reached the 2-year mark this month as far as our first pinafore sale goes. I registered on Etsy in September 2006, mostly to buy. :) Then I decided to try selling a few things here and there, but did not get serious until I started making the pinnies. Within three months of that first sale, I quit my job to go full-time with LG and never looked back. Well, not too much... *wink*
Just for fun, I went back in my transaction history to see exactly when the first pinafore sold and which one it was. Don't laugh at me... I really could not remember! I only knew that it was sometime in April or May of '07...
This TWEET pinnie was the very first one to sell in the Lassie Girl shop on May 1, 2007. Incidentally, that became one of our most popular styles and between all three colorways, I think I went through approx 75 yards of that fabric!
